This kit allows rapid and reliable detection of celery in food samples by real-time PCR. In combination with the Allergen RM 800 reference material, quantification is also possible.
Celery consumed as raw vegetables, cooked or as a spice (celery salt) can lead to a variety of allergic reactions, including anaphylactic shock. Celery is widely used in the food industry, and it is considered to be a “hidden allergen” because it is often undeclared in food. Due to the high content of essential oils and bitter substances, celery is often used as a seasoning ingredient in ready meals, soups, sauces, meat products or in spice blends.
