Beef

One PCR platform for your critical beef pathogen testing. Run E. coli O157:H7, major STEC, Listeria and Salmonella on the BAX® System Q7 in one harmonized PCR workflow, supported by sanitation verification, environmental monitoring and connected data across your beef operation.

Why choose Hygiena® for beef pathogen testing?

Hygiena supports beef processors at every stage, from slaughter and carcass dressing through fabrication, further processing and finished product. Beef food safety testing works best as a single program, not separate checks: sanitation verification, environmental monitoring and rapid pathogen detection in one place, pointing to the same corrective action. That is what turns individual results into control over STEC, E. coli O157:H7, Salmonella and Listeria.

Get E. coli O157:H7 results and sanitary dressing insight in one assay with Exact +S

The BAX® System E. coli O157:H7 Exact +S Real-Time PCR Assay detects E. coli O157:H7 while monitoring the S-target process indicator, which gives information related to process hygiene.

Trending the S-target as part of a Sanitary Dressing Index (SDI) or other process-monitoring programs can provide additional insight into sanitary dressing performance, helping identify shifts in process control and support preventive action.

PCR results are available in approximately 55 minutes following enrichment and lysis, supporting faster product-disposition decisions and reduced inventory hold times. The assay is an AOAC Research Institute Performance Tested MethodSM (#032602).

Go beyond Salmonella presence/absence with HPS

When it comes to Salmonella, not all pose the same risk to public health. Based on the Highly Pathogenic Salmonella (HPS) concept developed by the USDA Agricultural Research Service, the BAX System Real-Time PCR Assay for Highly Pathogenic Salmonella detects up to three virulence-associated genetic markers linked to the Salmonella serotypes most frequently associated with human illness.

Used only after an initial positive BAX System Salmonella spp. screening result, the assay tests the same lysate or isolated suspect colonies and provides results in under 90 minutes.

Results are intended exclusively for research and ecological surveillance. They are not to be used for food safety, regulatory, or product release decisions.

Frequently asked questions

Which STEC organisms does the BAX System detect in beef? The BAX System STEC Suite is designed to identify major non-O157 STEC recognized as food safety hazards by regulatory and public health authorities worldwide, including USDA FSIS, Health Canada, European authorities and Food Standards Australia New Zealand. E. coli O157:H7 is detected using dedicated BAX System assays.

What does the BAX System Real-time PCR Assay for HPS detect? Used only after an initial positive BAX System Salmonella spp. screening result, the HPS assay detects up to three virulence-associated genetic markers linked to the Salmonella serotypes most frequently associated with human illness. It is For Research Use Only. Results are not to be used for food safety, regulatory, or product release decisions.

Which Hygiena tests support environmental monitoring in beef plants? InSite Salmonella and Listeria tests provide targeted environmental monitoring. UltraSnap® ATP swabs on the EnSURE® Touch luminometer verify cleaning in 10 seconds, PRO-Clean checks for protein residue and MicroSnap delivers rapid indicator organism results for E. coli, coliforms and total viable count (aerobic plate count).
