Why choose Hygiena® for beef pathogen testing?

Hygiena supports beef processors at every stage, from slaughter and carcass dressing through fabrication, further processing and finished product. Beef food safety testing works best as a single program, not separate checks: sanitation verification, environmental monitoring and rapid pathogen detection in one place, pointing to the same corrective action. That is what turns individual results into control over STEC, E. coli O157:H7, Salmonella and Listeria.

Go beyond Salmonella presence/absence with HPS

When it comes to Salmonella, not all pose the same risk to public health. Based on the Highly Pathogenic Salmonella (HPS) concept developed by the USDA Agricultural Research Service, the BAX System Real-Time PCR Assay for Highly Pathogenic Salmonella detects up to three virulence-associated genetic markers linked to the Salmonella serotypes most frequently associated with human illness.

Used only after an initial positive BAX System Salmonella spp. screening result, the assay tests the same lysate or isolated suspect colonies and provides results in under 90 minutes.

Results are intended exclusively for research and ecological surveillance. They are not to be used for food safety, regulatory, or product release decisions.

Beef sanitation, environmental monitoring and pathogen testing

Hygiena brings the broader beef food safety program together.

  • Cleaning Verification & Environmental Monitoring
Verify cleaning effectiveness within seconds and monitor production environments where Salmonella and Listeria represent a relevant risk.

  • Pathogen Detection
Detect STEC, E. coli O157:H7, Salmonella and Listeria on the BAX System Q7 using a harmonized workflow.

  • Spoilage & Indicator Organisms
Monitor hygiene and process performance with rapid indicator testing for E. coli, coliforms, Enterobacteriaceae and total viable count (aerobic plate count).

  • Sanitation Management
Connect sanitation tasks, inspections, corrective actions and audits into a single digital workflow, strengthening accountability and traceability.

  • Data & Trend Analysis
Turn testing data into actionable insight and help teams move from results to corrective action across lines and sites.

Food safety testing at every stage of beef processing

Beef slaughter
Slaughter and sanitary dressing

Preventing transfer of fecal and gastrointestinal contamination onto carcasses is fundamental to controlling STEC and other enteric pathogens. ATP testing verifies cleaning effectiveness before production begins, PRO-Clean® checks for protein residue on food contact surfaces and MicroSnap® indicator testing helps monitor hygiene and process performance. BAX System real-time PCR provides rapid detection of STEC, E. coli O157:H7 and Salmonella on carcasses and trim.

Fabrication and raw further processing

As carcasses move through fabrication and trim, further processing, sanitation and cross-contamination control remain critical. Rapid hygiene verification, environmental monitoring and PCR pathogen testing help identify problems quickly and support timely corrective and product-disposition decisions.

Post-lethality and ready-to-eat beef

Where beef products are exposed after a lethality step, environmental control becomes increasingly important. Targeted Listeria environmental monitoring with InSite®, combined with sanitation verification and connected diagnostic data, helps teams identify trends and potential contamination risks and take appropriate corrective action. BAX System PCR assays confirm the presence of Listeria monocytogenes or genus Listeria when a positive result requires follow-up. KLEANZ® sanitation management software then connects the resulting sanitation tasks, inspections and corrective actions in one digital workflow, strengthening accountability and traceability.

Frequently asked questions

Which STEC organisms does the BAX System detect in beef? The BAX System STEC Suite is designed to identify major non-O157 STEC recognized as food safety hazards by regulatory and public health authorities worldwide, including USDA FSIS, Health Canada, European authorities and Food Standards Australia New Zealand. E. coli O157:H7 is detected using dedicated BAX System assays.

What does the BAX System Real-time PCR Assay for HPS detect? Used only after an initial positive BAX System Salmonella spp. screening result, the HPS assay detects up to three virulence-associated genetic markers linked to the Salmonella serotypes most frequently associated with human illness. It is For Research Use Only. Results are not to be used for food safety, regulatory, or product release decisions.

Which Hygiena tests support environmental monitoring in beef plants? InSite Salmonella and Listeria tests provide targeted environmental monitoring. UltraSnap® ATP swabs on the EnSURE® Touch luminometer verify cleaning in 10 seconds, PRO-Clean checks for protein residue and MicroSnap delivers rapid indicator organism results for E. coli, coliforms and total viable count (aerobic plate count).
